Learn the essential baking and decorating skills often taught over months. Brought together into 5 relaxed, hands-on evening masterclasses.
From classic and vegan sponges to buttercream, ganache, sugar paste, cupcakes, cookies, macarons and chocolate truffles, this all-inclusive course gives you the confidence to bake, decorate, package and present beautiful creations from start to finish.

- Week 1 (14 Sept) – Vanilla Sponge & Naked Cakes

What You’ll Learn
Week by Week
WEEK 1: Vanilla Sponge & Naked Cakes
- Bake the perfect vanilla sponge ( classic & vegan )
- Make buttercream
- Split, fill, and level cakes
- Decorate with fruits/real flowers
- Stacking & transporting tiered cakes
WEEK 2: Sugar paste & Modern Decorations
- Colour sugar paste
- Cover a board & trim with ribbons
- Cover a 3-tier dummy cake with sugar paste
- Make basic handmade sugar-wired flowers (rose & peony petals)
- Make foliage and fillers
WEEK 3: Chocolate Sponge & Ganache
- Bake the perfect chocolate sponge ( classic and vegan)
- Make chocolate ganache & mousse
- Split, fill, and level cakes
- Coat cakes
- Decorate with chocolate drips, sails & shards
WEEK 4: Cupcakes & Decorated Sugar Cookies
- Bake vanilla & chocolate cupcakes
- Make buttercream & colour
- Pipe buttercream swirls, roses, blossoms, grass, and leaves
- Pack 7 cupcakes in a floral arrangement and the rest in boxes
- Prepare and bake cookies ( vanilla & almond)
- Decorate with vanilla cookies with royal icing
- Decorate almond cookies artisan style
- Pack the cookies in cellophane bags to take home
WEEK 5: Macarons and chocolate truffles
- Prepare chocolate fillings (berries, lemon, hazelnuts, caramel)
- Fill 20 chocolate shells (mix of white, milk, dark shells)
- Decorate each flavoured truffle with a different design
- Wrap the truffles and pack them in a box and a bag
- Prepare, pipe and bake a tray of macaron shells
- Fill the macarons with the prepared fillings
- Decorate macarons in 4 different styles
- Pack the 20 macarons you made to take home at the end
By the end of each session, you will create projects similar to those shown in the photo selection below.

A relaxed, friendly and supportive environment, with a focused, hands-on approach to learning.
- Small group (maximum 6 participants) for personalised guidance
- Step-by-step demonstrations followed by your own hands-on practice
- Learn how to create beautiful cakes, cupcakes and cookies from scratch
- Ask questions at any time and work at your own pace
- Take home your creations each week to share and enjoy
You will be guided throughout the session and encouraged to work independently, helping you build real confidence in your skills.

Alongside the in-class experience, you will receive:
- E-booklet with recipes used in class
- Step-by-step video tutorials
So you can revisit and recreate everything at home with ease.

This is an intensive, practical course designed to give you real skills in a short time.
- Sessions start promptly, so arriving on time is important
- Each class is carefully prepared in advance with fresh ingredients and materials
- For this reason, missed sessions are non-refundable
Unable to attend for a week? You’ll still receive recipes, video guidance, and your prepared ingredients to continue at home.
This is a small, hands-on class designed not just to teach you, but to help you build confidence to bake and decorate independently.

You’ll build real skills and confidence as you learn to create beautiful desserts with less sugar, fewer additives, and incredible flavour. All while saving time and making the most of your ingredients.
I will do my best to make each session enjoyable and welcoming, and together with a small group of like-minded people who share the same passion, we will create a truly memorable and rewarding experience.
With over 35 years of experience as a pâtissier and chocolatier, and more than 16 years as an instructor, I have encountered and overcome countless challenges.
I am ready to share that experience with passionate learners like you.
