THIS IS A 9 CONSECUTIVE DAYS INTENSIVE IN-CLASS COURSE
PME professional diploma classes are recognised worldwide due to the excellent quality of the topics covered during classes.
Learning the secrets of the trade at our Academy is unique. We ensure the students get the best quality training possible, plus tips and tricks to help them become efficient quickly.
Students will learn techniques, from basic to advanced, everything they need to know before starting their adventure into the beautiful world of Sugar Art or simply furthering their knowledge. After successfully completing each module, students will receive a PME diploma certificate. At the end of all three modules, students who meet the criteria will receive a PME Master Decorator Certificate.
Price includes tuition fee for all three modules (intensive), a student kit for each module( the newest kits), one book per module( most recent issue), plus all the consumables.
This is a nine-day course, fast-pace, which starts daily at 9 am and finishes at 6 pm.Projects produced during the course will be more complex than the ones usually cover in the basic PME training ( 12 days training) and more modern techniques are included like painting/ airbrusing, chocolate, edible paper work, more sugarflowers & floral arrangements.
We will cover three major topics:
- Fondant( sugar paste/ gum paste)
- Piping ( royal icing, ganache, buttercream)
- Sugar flowers ( gum paste/ chocolate paste)
Each topic will be completed over three tuition days, totalling nine days.
Important business aspects will also be covered during the course, starting with advice on how to register and successfully run your business, have your kitchen authorised for running a food business, calculate the cost of cakes and decorations the easiest way, advertise your business the cheapest and most effective way, build a portfolio/ photo album, and many other relevant aspects.
The 40-minute lunch break starts daily at 12.50 pm. You can pop out to eat a sandwich ( plenty of shops within walking distance from school) or chill out in class and chill out. Free WIFI is available in all our classrooms.
Light refreshments (tea, coffee, biscuits, fruits, crisps, water) will be complimentary throughout the course, but lunch is not provided.
The student kits ( one for each of the three modules: sugar paste, sugar flowers and piping) contain the essential equipment needed for starting your business.
The course is based on DUMMY cakes (two three-tiered cakes( 4", 6", 8"), and a 6" square). It includes real cakes used during the introductory carving class, and the ganache-ing class also includes actual cookies, cupcakes, and cake pops, which will be decorated throughout the course.
Students can only supply something for the course. All is included in the price( consumables & equipment such as gloves, and aprons)
At the end of the course, you'll take home your student kits and books, all cakes/ decorations you will make during the course and most importantly, the KNOWLEDGE & CONFIDENCE, lots of tips and tricks for you to use in further successful projects.
Upon completing the course, you'll be given one diploma for each module and a final Master Cake Decorator Certificate, plus a sugar craft book as a gift for all your hard work.

COURSE LEVEL

Piping module :
- prepare royal icing, ganache, mousse and buttercream/ frosting for filling and piping,
- coat cakes with marzipan, royal icing, ganache, buttercream
- pipe scroll borders, flowers, creating run-out decorations, collars & extension work, string work, borders, brush embroidery, lace designs, run-out motifs
- flood and paint on cookies, dripping effect on cakes
- pipe flowers and figures on cupcakes
- Balance a cake, set multi-tiered cakes,
- price piped cakes
- Pack, transport, and deliver the cakes, including the costs involved, pricing guidelines, assembly, and presentation at the venue.
During the course, we will practically:
- Decorate a 3-tiered cake ( cake dummies ready covered in fondant)
- Flood and decorate three cookies (royal icing)
- make and decorate 2 cake pops( candy melts)
- Make two chocolate flowers.
- Cover and decorate one edged real cake and one round, 4"( using chocolate ganache/ mousse/ drips)
- learn how to make & decorate/ pack a floral cupcake bouquet( 12 cupcakes) with buttercream
Sugarflowers module :
During this ALL-INCLUSIVE course, students will learn all basic techniques of making sugar flowers

Also, students will learn what to choose as alternatives to sugar flowers, how to decorate cake stands & knives, and about costing & pricing your sugar flowers.
Flowers made during the course will be dusted and then taped in a few floral arrangements, which can be used to decorate cakes or simply as displays
We will also make a wafer paper rose and an isomalt fantasy flower.

- Modelling Human & Pet Figures
- Textures, Inlay and applique,
- Stacked Cake Design and handling
- Designing Celebration Cakes & Color Balance.
- Moderne effects with wafer and rice paper, edible printing
The business side will cover guidelines for starting a business from home, copyright and license issues, cake pricing, advertising, and insurance.
By the end of this course, you'll learn to cover, stack and decorate a four-tiered wedding cake, a square/ rectangular dummy cake, make a baby figure and a couple of adult-like figurines, decorate six cupcakes, two cookies, carve and decorate a real cake.
