Set the oven to heat at 170 degrees Celsius ( you can use an air fryer if you don't have an oven )
Start beating the eggs, and add the sugar gradually once the eggs have tripled in volume and look like a thin mayonnaise.
After beating in the sugar for 2-3 minutes, add the oil gradually and essence and keep stirring.
Fold in the flour and baking powder.
Pour the mixture into the cases and bake for 15 minutes.
Leave the cupcakes to cool, then decorate as per preference.
